New 2026 restaurant research points to beverages playing a larger role in traffic, differentiation and guest occasions. Eighty-seven percent of full-service operators and 80% of limited-service operators say beverages can be an important driver of restaurant traffic, while younger consumers are especially active in beverage-only occasions.
The opportunity extends beyond alcohol. Consumers are showing interest in specialty lemonades, juices, smoothies, teas, coffee drinks, craft sodas and other flavor-forward nonalcoholic options. Off-premises beverage sales also appear underdeveloped: 83% of delivery customers say they would order beverages more often if improved packaging made more options practical.
Why it matters
Beverage strategy is increasingly about more than attaching a drink to a meal. A distinctive drink can create a separate visit, support an afternoon daypart, lift the check, provide an alcohol-free option or make a restaurant more memorable without requiring a large expansion of the food menu.
But adding drinks indiscriminately can create inventory, prep and training complexity. The strongest opportunity is likely to come from a small number of beverages that fit the concept and can be executed consistently.
What it Means for Your Own Business
Start with your current beverage attach rate: what percentage of checks include a beverage, which drinks actually sell, and when? If the rate is low, test two or three distinctive options rather than adding a large new menu. For a full-service restaurant, that could mean a premium alcohol-free cocktail, a seasonal specialty drink or a simple tasting or pairing experience. For a café or quick-service concept, an afternoon beverage special may create a new reason to visit outside meal periods.
If takeout or delivery matters to your business, test packaging and bundles. The research suggests customers are more willing to add beverages when they travel well. Measure the result by attach rate and incremental check rather than judging the program by total beverage sales alone.
What to watch
Watch alcohol-free cocktails and beer, specialty coffee and tea, flavor-forward nonalcoholic drinks, beverage-only afternoon visits and beverage attachment to takeout and delivery. The useful signal for your own business is whether a focused beverage test increases visits, attach rate or check average without adding disproportionate waste or labor.
